Ingredients

  • 6 ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and roughly chopped
  • 1 red bell pepper, seeded and roughly chopped
  • 1 small red onion, roughly chopped
  • 2 cloves of garlic, crushed
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Handful of fresh basil leaves

Instructions

  1. In a blender, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
  2. While blending, slowly pour in the olive oil and red wine vinegar. Continue blending until well combined.
  3. Season the gazpacho with salt and pepper to taste.
  4. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  5. Before serving, tear the basil leaves and scatter them over the gazpacho.
