Gazpacho (wau Watermelon Gazpacho)
Gazpacho is a refreshing and flavorful cold soup that originates from South Sudanese Cuisine. This version of Gazpacho, known as Wau Watermelon Gazpacho, is a unique and delicious twist on the classic recipe.
Ingredients
- 4 cups diced watermelon
- 1 cucumber, peeled and diced
- 1 red bell pepper, seeded and diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a blender, combine the watermelon, cucumber, red bell pepper, red onion, garlic, and basil leaves. Blend until smooth.
- While the blender is running, slowly drizzle in the olive oil and red wine vinegar. Continue blending until well combined.
- Season the gazpacho with salt and pepper to taste. Refrigerate for at least 2 hours before serving.
