Gazpacho is a refreshing and flavorful cold soup that originates from South Sudanese Cuisine. This version of Gazpacho, known as Wau Watermelon Gazpacho, is a unique and delicious twist on the classic recipe.

Gazpacho (wau Watermelon Gazpacho)

Ingredients

  • 4 cups diced watermelon
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, seeded and diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a blender, combine the watermelon, cucumber, red bell pepper, red onion, garlic, and basil leaves. Blend until smooth.
  2. While the blender is running, slowly drizzle in the olive oil and red wine vinegar. Continue blending until well combined.
  3. Season the gazpacho with salt and pepper to taste. Refrigerate for at least 2 hours before serving.
