Ingredients
- 2 large yams, peeled and grated
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 lb shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1/2 cup chopped cilantro
- Oil for frying
Instructions
- In a large bowl, combine the grated yams, flour, salt, black pepper, and cayenne pepper. Mix well to form a dough.
- Shape the dough into small balls and set aside.
- In a skillet, heat vegetable oil over medium heat. Add the shrimp and cook until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, sauté the onion and garlic until softened. Add the paprika, thyme, and curry powder. Stir in the cooked shrimp and chopped cilantro. Cook for an additional 2-3 minutes.
- While the shrimp is cooking, heat oil for frying in a separate pot or deep fryer.
- Fry the yam balls in batches until golden brown and crispy. Drain on paper towels.
- Serve the fried yam balls with the spicy shrimp mixture on top.
