Ingredients
- 4 large bell peppers
- 1 cup long-grain rice
- 1 onion, finely chopped
- 2 tomatoes, diced

- Salt and pepper to taste
- 1 cup vegetable broth
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.

- Stuff the bell peppers with the rice mixture and place them in a baking dish.
- Pour the vegetable broth into the bottom of the baking dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the rice is cooked.
- Serve the gemista hot, garnished with additional fresh herbs if desired.
