Gemista (greek-style Stuffed Baked Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup long-grain rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 cup vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the rice, onion, tomatoes, parsley, dill, olive oil, salt, and pepper.
  4. Stuff the bell peppers with the rice mixture and place them in a baking dish.
  5. Pour the vegetable broth into the bottom of the baking dish.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender and the rice is cooked.
  8. Serve the gemista hot, garnished with additional fresh herbs if desired.
