Gemista (greek-style Stuffed Bell Peppers)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the cooked rice, onion, tomatoes, parsley, mint, olive oil, salt, and pepper.
  4. Stuff the bell peppers with the rice mixture and place them in a baking dish.
  5. Cover the dish with aluminum foil and bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
  7. Serve the gemista hot or at room temperature.
