Gemista (greek-style Stuffed Bell Peppers)
Gemista is a traditional Greek dish of stuffed bell peppers with a flavorful mixture of rice, herbs, and spices. This vegetarian dish is a perfect combination of fresh ingredients and Mediterranean flavors.
Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the cooked rice, onion, tomatoes, parsley, mint, olive oil, salt, and pepper.
- Stuff the bell peppers with the rice mixture and place them in a baking dish.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
- Serve the gemista hot or at room temperature.
