Ingredients
- 4 medium-sized squid, cleaned and tentacles reserved
- 1 cup of rice
- 1 onion, finely chopped
- 2 tomatoes, grated
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh dill, chopped
- 1/4 cup of extra virgin olive oil
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- 1 lemon, cut into wedges for serving
Instructions
- Heat 2 tablespoons of olive oil in a pan and sauté the chopped onion until translucent.
- Add the rice to the pan and stir to coat it with the oil. Cook for 2 minutes.
- Add the grated tomatoes, parsley, dill, oregano, salt, and pepper. Cook for another 5 minutes, then remove from heat and let it cool.
- Stuff the squid with the rice mixture and secure the openings with toothpicks.
- Heat the remaining olive oil in a large skillet over medium heat. Add the stuffed squid and tentacles, and cook for 5 minutes on each side until golden brown.
- Add 1 cup of water to the skillet, cover, and simmer for 30 minutes until the squid is tender and the rice is cooked.
- Serve the stuffed squid hot, with lemon wedges on the side.
