Ingredients

  • 4 medium-sized squid, cleaned and tentacles reserved
  • 1 cup of rice
  • 1 onion, finely chopped
  • 2 tomatoes, grated
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh dill, chopped
  • 1/4 cup of extra virgin olive oil
  • 1/2 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 lemon, cut into wedges for serving

Instructions

  1. Heat 2 tablespoons of olive oil in a pan and sauté the chopped onion until translucent.
  2. Add the rice to the pan and stir to coat it with the oil. Cook for 2 minutes.
  3. Add the grated tomatoes, parsley, dill, oregano, salt, and pepper. Cook for another 5 minutes, then remove from heat and let it cool.
  4. Stuff the squid with the rice mixture and secure the openings with toothpicks.
  5. Heat the remaining olive oil in a large skillet over medium heat. Add the stuffed squid and tentacles, and cook for 5 minutes on each side until golden brown.
  6. Add 1 cup of water to the skillet, cover, and simmer for 30 minutes until the squid is tender and the rice is cooked.
  7. Serve the stuffed squid hot, with lemon wedges on the side.
