Ingredients
- 4 medium zucchinis
- 1 pound ground beef
- 1 onion, finely chopped
- 1/2 cup rice
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1/2 cup grated feta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the flesh, leaving about 1/4 inch thick shells. Chop the scooped-out flesh and set aside.
- In a large bowl, mix together the ground beef, chopped onion, rice, chopped zucchini flesh, parsley, dill, feta cheese, Parmesan cheese, and olive oil. Season with salt and pepper.
- Stuff the zucchini shells with the meat mixture and place them in a deep skillet or a baking dish.
- Add 1 cup of water to the skillet or baking dish, cover with a lid or foil, and cook over medium heat for 30 minutes, or bake in the preheated oven for 30 minutes.
- Uncover the skillet or baking dish and continue cooking for another 30 minutes, or until the zucchinis are tender and the filling is cooked through.
