Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 250g ground beef or lamb
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Kefalotyri or Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 180°C (350°F).
- Chop the mushroom stems finely.
- Heat the olive oil in a skillet over medium heat. Add the onion and chopped mushroom stems, and cook until softened.
- Add the garlic and ground meat to the skillet. Cook until the meat is browned, breaking it up with a spoon as it cooks.
- Season the mixture with oregano, salt, and pepper. Remove from heat and let it cool slightly.
- Stir in the grated cheese and chopped parsley.
- Stuff the mushroom caps with the meat mixture and place them in a baking dish.
- Bake for 25-30 minutes, or until the mushrooms are tender and the filling is golden on top.
- Serve hot and enjoy!
