Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 250g ground beef or lamb
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Kefalotyri or Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Chop the mushroom stems finely.
  3. Heat the olive oil in a skillet over medium heat. Add the onion and chopped mushroom stems, and cook until softened.
  4. Add the garlic and ground meat to the skillet. Cook until the meat is browned, breaking it up with a spoon as it cooks.
  5. Season the mixture with oregano, salt, and pepper. Remove from heat and let it cool slightly.
  6. Stir in the grated cheese and chopped parsley.
  7. Stuff the mushroom caps with the meat mixture and place them in a baking dish.
  8. Bake for 25-30 minutes, or until the mushrooms are tender and the filling is golden on top.
