Ingredients

  • 4 large tomatoes
  • 1 cup long-grain rice
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/4 cup pine nuts
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the flesh. Sprinkle the insides with salt and turn upside down to drain.
  3. In a large bowl, combine the rice, onion, garlic, parsley, mint, olive oil, pine nuts, salt, and pepper. Mix well.
  4. Stuff the tomato shells with the rice mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 45 minutes. Then uncover and bake for an additional 15 minutes until the tomatoes are tender and the rice is cooked.
  6. Serve the stuffed tomatoes hot or at room temperature.
