Ingredients
- 4 large tomatoes
- 1 cup long-grain rice
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 1/4 cup pine nuts
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the flesh. Sprinkle the insides with salt and turn upside down to drain.
- In a large bowl, combine the rice, onion, garlic, parsley, mint, olive oil, pine nuts, salt, and pepper. Mix well.
- Stuff the tomato shells with the rice mixture and place them in a baking dish.
- Cover the dish with foil and bake for 45 minutes. Then uncover and bake for an additional 15 minutes until the tomatoes are tender and the rice is cooked.
- Serve the stuffed tomatoes hot or at room temperature.
