Ingredients
- 2 cups diced pumpkin
- 1 can coconut milk
- 1 onion, sliced
- 2-3 red chilies, sliced
- 2-3 garlic cloves, minced
- 1 tbsp red curry paste
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 cup vegetable broth
- 1 cup fresh basil leaves
- Salt to taste
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the red curry paste and stir until fragrant.
- Add the onion, garlic, and red chilies. Cook until the onion is soft.
- Add the diced pumpkin, soy sauce, brown sugar, and vegetable broth. Stir to combine.
- Simmer for 20-25 minutes, or until the pumpkin is tender.
- Stir in the fresh basil leaves and season with salt to taste.
- Serve the spicy pumpkin curry hot with steamed rice.
