Geng Fak Thong (spicy Pumpkin Curry)

Ingredients

  • 2 cups diced pumpkin
  • 1 can coconut milk
  • 1 onion, sliced
  • 2-3 red chilies, sliced
  • 2-3 garlic cloves, minced
  • 1 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 cup vegetable broth
  • 1 cup fresh basil leaves
  • Salt to taste

Instructions

  1. In a large pot, heat the coconut milk over medium heat.
  2. Add the red curry paste and stir until fragrant.
  3. Add the onion, garlic, and red chilies. Cook until the onion is soft.
  4. Add the diced pumpkin, soy sauce, brown sugar, and vegetable broth. Stir to combine.
  5. Simmer for 20-25 minutes, or until the pumpkin is tender.
  6. Stir in the fresh basil leaves and season with salt to taste.
  7. Serve the spicy pumpkin curry hot with steamed rice.
