Ingredients
- 1.5 lbs chicken, cut into pieces
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 cup bamboo shoots
- 1 cup Thai basil leaves
- Salt to taste
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the red curry paste and stir until fragrant.
- Add the chicken pieces, onion, and garlic. Cook until the chicken is no longer pink.
- Stir in the fish sauce, brown sugar, and salt.
- Add the bell pepper, bamboo shoots, and Thai basil leaves. Simmer for 15-20 minutes.
- Adjust seasoning to taste and serve hot with steamed rice.
