Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cup bamboo shoots
  • 1 cup Thai basil leaves
  • Salt to taste

Instructions

  1. In a large pot, heat the coconut milk over medium heat.
  2. Add the red curry paste and stir until fragrant.
  3. Add the chicken pieces, onion, and garlic. Cook until the chicken is no longer pink.
  4. Stir in the fish sauce, brown sugar, and salt.
  5. Add the bell pepper, bamboo shoots, and Thai basil leaves. Simmer for 15-20 minutes.
  6. Adjust seasoning to taste and serve hot with steamed rice.
