Geng Jued (spicy Tofu Soup)

Ingredients

  • 1 block of firm tofu, cubed
  • 4 cups of vegetable broth
  • 2 tablespoons of soy sauce
  • 2 tablespoons of chili paste
  • 1 tablespoon of minced garlic
  • 1 tablespoon of minced ginger
  • 1 cup of sliced mushrooms
  • 1 cup of sliced bok choy
  • 1/2 cup of sliced carrots
  • 1/4 cup of chopped green onions
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the soy sauce, chili paste, garlic, and ginger to the pot. Stir to combine.
  3. Add the tofu, mushrooms, bok choy, and carrots to the pot. Let the soup simmer for 15-20 minutes, or until the vegetables are tender.
