Ingredients
- 1 block of firm tofu, cubed
- 4 cups of vegetable broth
- 2 tablespoons of soy sauce
- 2 tablespoons of chili paste
- 1 tablespoon of minced garlic
- 1 tablespoon of minced ginger
- 1 cup of sliced mushrooms
- 1 cup of sliced bok choy
- 1/2 cup of sliced carrots
- 1/4 cup of chopped green onions
- Salt and pepper to taste
Instructions
- In a large pot, bring the vegetable broth to a simmer over medium heat.
- Add the soy sauce, chili paste, garlic, and ginger to the pot. Stir to combine.
- Add the tofu, mushrooms, bok choy, and carrots to the pot. Let the soup simmer for 15-20 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste.
- Garnish with chopped green onions before serving.
