Georgian Lobiani (Bean-filled Bread)

Ingredients

  • 2 cups of cooked red kidney beans
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground coriander
  • 1 teaspoon of ground fenugreek
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of fresh parsley, chopped
  • 1 pound of pizza dough

Instructions

  1. In a large bowl, mash the cooked red kidney beans with a fork or potato masher.
  2. Add the chopped onion, minced garlic, ground coriander, ground fenugreek, salt, black pepper, and chopped parsley to the mashed beans. Mix well to combine.
  3. Preheat the oven to 375°F (190°C).
  4. Divide the pizza dough into 8 equal portions. Roll each portion into a ball and then flatten it into a disc shape.
  5. Place a generous spoonful of the bean mixture onto the center of each dough disc. Fold the edges of the dough over the filling and pinch to seal, creating a round or oval-shaped bread.
  6. Place the filled bread on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until the bread is golden brown.
  7. Remove from the oven and let the bread cool for a few minutes before serving.
