Georgian Lobiani (Bean-filled Bread)
Bean-filled Bread, also known as Georgian Lobiani, is a traditional dish from the Caucasus region. This savory bread is filled with a flavorful mixture of seasoned beans, making it a delicious and satisfying meal.
Ingredients
- 2 cups of cooked red kidney beans
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of ground coriander
- 1 teaspoon of ground fenugreek
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of fresh parsley, chopped
- 1 pound of pizza dough
Instructions
- In a large bowl, mash the cooked red kidney beans with a fork or potato masher.
- Add the chopped onion, minced garlic, ground coriander, ground fenugreek, salt, black pepper, and chopped parsley to the mashed beans. Mix well to combine.
- Preheat the oven to 375°F (190°C).
- Divide the pizza dough into 8 equal portions. Roll each portion into a ball and then flatten it into a disc shape.
- Place a generous spoonful of the bean mixture onto the center of each dough disc. Fold the edges of the dough over the filling and pinch to seal, creating a round or oval-shaped bread.
- Place the filled bread on a baking sheet lined with parchment paper and bake in the preheated oven for 25-30 minutes, or until the bread is golden brown.
- Remove from the oven and let the bread cool for a few minutes before serving.
