Georgian Lobio (spiced Bean Stew) Wraps

Ingredients

  • 2 cups cooked red kidney beans
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground fenugreek
  • 1/2 tsp cayenne pepper
  • 1/2 cup chopped fresh cilantro
  • Salt to taste
  • 4 large tortillas

Instructions

  1. In a large skillet, sauté the onion and garlic until softened.
  2. Add the ground coriander, fenugreek, and cayenne pepper, and cook for another 2 minutes.
  3. Add the cooked beans and cook for 10 minutes, mashing some of the beans with the back of a spoon to thicken the stew.
  4. Stir in the chopped cilantro and season with salt to taste.
  5. Warm the tortillas and spoon the bean stew onto each tortilla.
  6. Roll up the tortillas, tucking in the sides to create wraps.
