Ingredients
- 2 cups cooked red kidney beans
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground fenugreek
- 1/2 tsp cayenne pepper
- 1/2 cup chopped fresh cilantro
- Salt to taste
- 4 large tortillas
Instructions
- In a large skillet, sauté the onion and garlic until softened.
- Add the ground coriander, fenugreek, and cayenne pepper, and cook for another 2 minutes.
- Add the cooked beans and cook for 10 minutes, mashing some of the beans with the back of a spoon to thicken the stew.
- Stir in the chopped cilantro and season with salt to taste.
- Warm the tortillas and spoon the bean stew onto each tortilla.
- Roll up the tortillas, tucking in the sides to create wraps.
