German Apple Cinnamon Rolls (Deutsche Apfel-Zimt-Schnecken)

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 package active dry yeast
  • 3/4 cup milk
  • 1/4 cup unsalted butter
  • 2 cups diced apples
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk

Instructions

  1. In a large bowl, combine 2 cups of flour, granulated sugar, salt, and yeast.
  2. In a small saucepan, heat the milk and butter until warm (120°F to 130°F).
  3. Add the milk mixture to the dry ingredients and beat until smooth.
  4. Stir in enough remaining flour to form a soft dough.
  5. Turn the dough onto a floured surface and knead until smooth and elastic, about 6-8 minutes.
  6. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  7. Punch the dough down. Turn onto a lightly floured surface and roll into a 12x10-inch rectangle.
  8. In a small bowl, combine the diced apples, brown sugar, and cinnamon. Spread over dough to within 1/2 inch of edges.
  9. Roll up jelly-roll style, starting with a long side; pinch seam to seal.
  10. Cut into 12 slices. Place cut side down in a greased 13x9-inch baking pan. Cover and let rise until doubled, about 30 minutes.
  11. Preheat oven to 375°F. Bake for 25-30 minutes or until golden brown.
  12. In a small bowl, combine powdered sugar and enough milk to achieve desired consistency. Drizzle over warm rolls.
