Ghapama
Ghapama is a traditional Armenian dish made with pumpkin, stuffed with a sweet and fragrant filling. It is often served during special occasions and celebrations.
Ingredients
- 1 medium-sized pumpkin
- 1 cup rice
- 1 cup mixed dried fruits (apricots, prunes, raisins)
- 1/2 cup chopped nuts (almonds, walnuts)
- 1/2 cup sugar
- 1/4 cup honey
- 1/4 cup butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Cut the top off the pumpkin and set it aside. Scoop out the seeds and stringy flesh from the inside.
- In a bowl, mix together the rice, dried fruits, nuts, sugar, honey, butter, cinnamon, cloves, nutmeg, and salt.
- Stuff the pumpkin with the rice mixture and place the pumpkin top back on.
- Place the stuffed pumpkin on a baking sheet and bake for 2 hours, or until the pumpkin is tender.
- Serve the ghapama hot, scooping out portions of the pumpkin along with the filling.
