Ghapama

Ghapama is a traditional Armenian dish made with pumpkin, stuffed with a sweet and fragrant filling. It is often served during special occasions and celebrations.

Ingredients

  • 1 medium-sized pumpkin
  • 1 cup rice
  • 1 cup mixed dried fruits (apricots, prunes, raisins)
  • 1/2 cup chopped nuts (almonds, walnuts)
  • 1/2 cup sugar
  • 1/4 cup honey
  • 1/4 cup butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cut the top off the pumpkin and set it aside. Scoop out the seeds and stringy flesh from the inside.
  3. In a bowl, mix together the rice, dried fruits, nuts, sugar, honey, butter, cinnamon, cloves, nutmeg, and salt.
  4. Stuff the pumpkin with the rice mixture and place the pumpkin top back on.
  5. Place the stuffed pumpkin on a baking sheet and bake for 2 hours, or until the pumpkin is tender.
  6. Serve the ghapama hot, scooping out portions of the pumpkin along with the filling.
