Ghoozi (grilled Prawns With Spicy Tomato Chutney)

Ingredients
- 20 large prawns, deveined and cleaned
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- For the spicy tomato chutney:
- 4 ripe tomatoes, diced
- 1 small red onion, finely chopped
- 2 garlic cloves, minced
- 1 red chili, finely chopped
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 tablespoon white vinegar
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine the prawns with olive oil, cumin, paprika, cayenne pepper, salt, and pepper. Toss to coat the prawns evenly.
- Thread the prawns onto skewers and grill for 2-3 minutes on each side, or until they are pink and opaque.
- Meanwhile, prepare the spicy tomato chutney. In a saucepan, combine the diced tomatoes, red onion, garlic, red chili, ground coriander, ground cumin, white vinegar, and salt. Cook over medium heat for 8-10 minutes, stirring occasionally, until the chutney thickens.
- Serve the grilled prawns with the spicy tomato chutney on the side.
