Ingredients

  • 20 large prawns, deveined and cleaned
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • For the spicy tomato chutney:
  • 4 ripe tomatoes, diced
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red chili, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 tablespoon white vinegar
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the prawns with olive oil, cumin, paprika, cayenne pepper, salt, and pepper. Toss to coat the prawns evenly.
  3. Thread the prawns onto skewers and grill for 2-3 minutes on each side, or until they are pink and opaque.
  4. Meanwhile, prepare the spicy tomato chutney. In a saucepan, combine the diced tomatoes, red onion, garlic, red chili, ground coriander, ground cumin, white vinegar, and salt. Cook over medium heat for 8-10 minutes, stirring occasionally, until the chutney thickens.
  5. Serve the grilled prawns with the spicy tomato chutney on the side.
