Ghoriba (algerian Almond And Semolina Cookies)
Ghoriba are traditional Algerian almond and semolina cookies that are popular during festive occasions such as Eid. These delicate, crumbly cookies are flavored with almond and often dusted with powdered sugar.
Ingredients
- 1 cup almond flour
- 1 cup fine semolina
- 1/2 cup powdered sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 teaspoon almond extract
- 1/4 cup whole almonds, for decoration
Instructions
- In a large bowl, mix together the almond flour, semolina, powdered sugar, baking powder, and salt.
- Add the melted butter and almond extract to the dry ingredients, and mix until a dough forms.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Shape the dough into small balls, place them on the prepared baking sheet, and press a whole almond into the center of each cookie.
- Bake for 15 minutes, or until the cookies are lightly golden brown.
- Let the ghoriba cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust the cooled cookies with powdered sugar before serving.
