Ghormeh Sabzi (spicy Lentil And Herb Stew)

Ingredients

  • 1 cup green or brown lentils
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups mixed fresh herbs (parsley, cilantro, and dill), finely chopped
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.
  2. Add the minced garlic, turmeric, cumin, and cinnamon to the pot. Stir and cook for a few minutes until fragrant.
  3. Add the chopped herbs to the pot and sauté for 5 minutes, allowing the flavors to meld together.
  4. Rinse the lentils and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for 45 minutes to 1 hour, or until the lentils are tender.
  6. Adjust the seasoning if needed and serve the Ghormeh Sabzi hot with steamed rice.
