Ghormeh Sabzi (spicy Lentil And Herb Stew)
Ghormeh Sabzi is a traditional Persian stew that is bursting with flavor from a combination of herbs, spices, and lentils. This hearty and aromatic dish is a staple in Caspian cuisine and is perfect for a cozy dinner.
Ingredients
- 1 cup green or brown lentils
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 cups mixed fresh herbs (parsley, cilantro, and dill), finely chopped
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the minced garlic, turmeric, cumin, and cinnamon to the pot. Stir and cook for a few minutes until fragrant.
- Add the chopped herbs to the pot and sauté for 5 minutes, allowing the flavors to meld together.
- Rinse the lentils and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 45 minutes to 1 hour, or until the lentils are tender.
- Adjust the seasoning if needed and serve the Ghormeh Sabzi hot with steamed rice.
