Ghormeh (spiced Beef Curry)

Ingredients

  • 1.5 lbs beef, cut into cubes
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 can kidney beans, drained and rinsed
  • 2 tomatoes, diced
  • 1 cup beef broth
  • 2 tbsp vegetable oil
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the beef cubes to the pot and brown on all sides.
  3. Stir in the turmeric, cumin, paprika, salt, and pepper.
  4. Pour in the beef broth and bring to a simmer. Cover and cook for 1.5 hours, stirring occasionally.
  5. Add the diced tomatoes and kidney beans to the pot. Cook for an additional 30 minutes.
  6. Adjust seasoning if needed and serve hot.
