Ghraybeh (lebanese Almond Cookies)
Ghraybeh, also known as Lebanese Almond Cookies, are delicate, buttery, and melt-in-your-mouth cookies that are popular in Levantine cuisine.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 cup almond flour
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract
- Whole blanched almonds for garnish
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
- Add the almond flour, all-purpose flour, and vanilla extract to the bowl. Mix until a smooth dough forms.
- Shape the dough into small balls and place them on the prepared baking sheet.
- Gently press a whole blanched almond into the center of each cookie.
- Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
