Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 cup almond flour
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • Whole blanched almonds for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
  3. Add the almond flour, all-purpose flour, and vanilla extract to the bowl. Mix until a smooth dough forms.
  4. Shape the dough into small balls and place them on the prepared baking sheet.
  5. Gently press a whole blanched almond into the center of each cookie.
  6. Bake in the preheated oven for 15-18 minutes, or until the edges are lightly golden.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
