Gibraltar's Creamy Mushroom and Spinach Risotto (Risotto Cremoso de Champiñones y Espinacas de Gibraltar)

Ingredients

  • 1 cup Arborio rice
  • 1/2 cup white wine
  • 4 cups vegetable broth
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese (optional for non-vegan version)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.

  3. Pour in the white wine and cook until the liquid is absorbed, stirring constantly.

  5. After about 20 minutes, when the rice is almost cooked, add the sliced mushrooms and cook for an additional 5 minutes.
  6. Stir in the fresh spinach and cook until wilted.
  7. If using Parmesan cheese, stir it into the risotto until melted and creamy. Season with salt and pepper to taste.
  8. Remove from heat and let the risotto rest for a few minutes before serving.
