Ingredients
- 1 cup Arborio rice
- 1/2 cup white wine
- 4 cups vegetable broth
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese (optional for non-vegan version)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the Arborio rice to the pot and stir to coat the rice with the oil, onion, and garlic mixture.
- Pour in the white wine and cook until the liquid is absorbed, stirring constantly.
- Gradually add the vegetable broth, one ladle at a time, stirring frequently and allowing the liquid to be absorbed before adding more.
- After about 20 minutes, when the rice is almost cooked, add the sliced mushrooms and cook for an additional 5 minutes.
- Stir in the fresh spinach and cook until wilted.
- If using Parmesan cheese, stir it into the risotto until melted and creamy. Season with salt and pepper to taste.
- Remove from heat and let the risotto rest for a few minutes before serving.
