Ingredients
- 4 chicken thighs
- 2 cups of rice
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 teaspoon of saffron threads
- 4 cups of chicken broth
- 1 teaspoon of paprika
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- In a large pot, heat the olive oil over medium heat. Brown the chicken thighs for 5 minutes on each side. Remove and set aside.
- In the same pot, sauté the onion, garlic, and red bell pepper until softened.
- Add the rice, saffron threads, and dried oregano. Stir to combine.
- Pour in the chicken broth and bring to a simmer.
- Return the chicken thighs to the pot, cover, and let it cook for 20-25 minutes until the rice is tender and the chicken is fully cooked.
