Ingredients
- 1 pound salt cod, soaked and flaked
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 eggs
- 1 cup milk
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, mix together the flaked salt cod, flour, baking powder, eggs, and milk until well combined.
- Add the chopped onion, minced garlic, and chopped parsley to the mixture. Season with salt and pepper, and mix until evenly distributed.
- Heat vegetable oil in a deep pan over medium heat.
- Scoop spoonfuls of the batter and carefully drop them into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels to remove excess oil.
- Serve the Buñuelos de Bacalao de Gibraltar hot, with a side of aioli or lemon wedges.
