Ingredients

  • 1 pound salt cod, soaked and flaked
  • 2 cups all-purpose flour

  • 2 eggs
  • 1 cup milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the flaked salt cod, flour, baking powder, eggs, and milk until well combined.
  2. Add the chopped onion, minced garlic, and chopped parsley to the mixture. Season with salt and pepper, and mix until evenly distributed.
  3. Heat vegetable oil in a deep pan over medium heat.
  4. Scoop spoonfuls of the batter and carefully drop them into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the fritters from the oil and drain on paper towels to remove excess oil.
