Ingredients

  • 1 tsp ground coriander

  • 1/4 cup (60ml) soy sauce
  • 1/4 cup (60ml) coconut milk
  • 1/4 cup (60g) creamy peanut butter
  • 2 tbsp (30ml) lime juice
  • 2 tbsp (30ml) honey
  • 1/4 cup (60ml) water
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the garlic, cumin, coriander, turmeric, cayenne pepper, soy sauce, and coconut milk. Add the chicken strips and marinate for 30 minutes.
  2. Thread the marinated chicken strips onto the soaked skewers.
  3. Preheat a grill or grill pan over medium-high heat. Cook the chicken skewers for 3-4 minutes on each side, or until fully cooked.
