Ingredients

  • 1 lb beef, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, julienned
  • 2 tablespoons curry powder
  • 2 cups coconut milk
  • 2 cups water
  • 2 potatoes, peeled and cubed
  • 1 carrot, sliced
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
  2. Add the beef cubes and cook until browned.
  3. Sprinkle curry powder over the beef and stir to coat evenly.
  4. Pour in coconut milk and water. Bring to a simmer and cook for 30 minutes, or until the beef is tender.
  5. Add potatoes and carrots, and continue to simmer until the vegetables are cooked through.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy with steamed rice.
