Ingredients

  • 1 whole chicken, cut into serving pieces
  • 2 cups coconut milk
  • 1 onion, chopped

  • 2 cups squash, cubed
  • 1 cup string beans, cut into 2-inch pieces
  • 2 pieces long green chili (siling haba)
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine coconut milk, onion, garlic, and ginger. Bring to a simmer over medium heat.
  2. Add the chicken pieces and cook for 15 minutes, stirring occasionally.
  3. Add the squash and cook for another 10 minutes.
  4. Stir in the string beans and long green chili. Simmer for 5 minutes or until the vegetables are tender.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
