Ingredients
- 1 whole chicken, cut into serving pieces
- 2 cups coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 thumb-sized ginger, julienned
- 2 cups squash, cubed
- 1 cup string beans, cut into 2-inch pieces
- 2 pieces long green chili (siling haba)
- Salt and pepper to taste
Instructions
- In a large pot, combine coconut milk, onion, garlic, and ginger. Bring to a simmer over medium heat.
- Add the chicken pieces and cook for 15 minutes, stirring occasionally.
- Add the squash and cook for another 10 minutes.
- Stir in the string beans and long green chili. Simmer for 5 minutes or until the vegetables are tender.
- Season with salt and pepper to taste.
