Ginger Scallion Lobster (姜葱龙虾)

Ingredients
- 2 live lobsters (about 1 1/2 pounds each), halved lengthwise
- 3 tablespoons vegetable oil
- 3 tablespoons minced fresh ginger
- 3 tablespoons minced scallions
- 2 tablespoons Shaoxing wine
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Add the lobster halves and cook for 5-6 minutes until the shells turn red. Remove the lobster and drain.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the ginger and scallions, and stir-fry for 1-2 minutes until fragrant.
- Add the Shaoxing wine, soy sauce, sugar, and chicken broth. Bring to a simmer.
- Add the lobster halves to the wok or skillet, and stir-fry for 2-3 minutes, coating the lobster with the sauce.
- Season with salt and pepper to taste. Transfer the lobster to a serving platter and pour the sauce over the top.
