Gingerbread Rum Trifle

Ingredients

  • 3 cups crumbled gingerbread
  • 1/2 cup spiced rum
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. In a small bowl, drizzle the crumbled gingerbread with the spiced rum. Set aside to allow the gingerbread to soak up the rum.
  2. In a saucepan, heat the milk over medium heat until it is hot but not boiling.
  3. In a separate bowl, whisk together the granulated sugar, cornstarch, and egg yolks until well combined.
  4. Gradually pour the hot milk into the egg mixture, whisking constantly.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens to a custard consistency.
  6. Remove the custard from the heat and stir in the vanilla extract. Allow it to cool slightly.
  7. In a large bowl, whip the heavy cream with powdered sugar, cinnamon, ginger, and nutmeg until stiff peaks form.
  8. To assemble the trifle, layer the soaked gingerbread, custard, and whipped cream in a trifle dish, repeating until all ingredients are used up.
  9. Chill the trifle in the refrigerator for at least 4 hours before serving to allow the flavors to meld together.
