Ingredients
- 2 medium-sized bitter melons, sliced and deseeded

- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1 cup water

Instructions
- Heat oil in a pan over medium heat. Sauté garlic, onion, and tomato until fragrant.
- If using pork, add the sliced pork and cook until lightly browned.
- Add the bitter melon slices and cook for 3-5 minutes until slightly softened.
- Pour in the soy sauce and vinegar. Let it simmer for 2 minutes.
- Pour in the water and let it boil. Season with salt and pepper to taste.
- Slowly pour the beaten eggs while stirring the mixture to create egg ribbons.
