Giouvetsi (greek-style Baked Chicken Orzo)

Ingredients

  • 4 chicken thighs
  • 1 cup orzo
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 4 minutes per side. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
  5. Stir in the diced tomatoes, chicken broth, dried oregano, and dried thyme. Bring the mixture to a simmer.
  6. Stir in the orzo and season with salt and pepper.
  7. Return the chicken thighs to the skillet, nestling them into the orzo mixture.
  8. Cover the skillet with foil and bake in the preheated oven for 45 minutes.
  9. Remove the foil and continue baking for an additional 15 minutes, or until the orzo is tender and the chicken is cooked through.
  10. Let the giouvetsi rest for a few minutes before serving.
