Giouvetsi (greek-style Baked Chicken Orzo)
Giouvetsi is a traditional Greek dish featuring tender chicken, flavorful orzo, and a rich tomato sauce. This baked one-pot meal is a comforting and satisfying option for a family dinner or a gathering with friends.
Ingredients
- 4 chicken thighs
- 1 cup orzo
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 4 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.
- Stir in the diced tomatoes, chicken broth, dried oregano, and dried thyme. Bring the mixture to a simmer.
- Stir in the orzo and season with salt and pepper.
- Return the chicken thighs to the skillet, nestling them into the orzo mixture.
- Cover the skillet with foil and bake in the preheated oven for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the orzo is tender and the chicken is cooked through.
- Let the giouvetsi rest for a few minutes before serving.
