Ingredients

  • 3 cloves of garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 cup chicken stock
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until fragrant.
  3. Add the gizzards to the pan and cook until browned on all sides.
  4. Stir in the diced bell peppers and chopped tomatoes, and cook for 5 minutes.
  5. Season the mixture with thyme, curry powder, paprika, salt, and pepper.
  6. Pour in the chicken stock, cover the pan, and simmer for 30 minutes until the gizzards are tender.
  7. Add the cubed plantains to the pan and cook for an additional 10 minutes, stirring occasionally.
  8. Adjust the seasoning if needed and serve hot.
