Ingredients
- 500g gizzards, cleaned and cut into bite-sized pieces
- 3 ripe plantains, peeled and cut into cubes

- 2 bell peppers, diced

- 1 teaspoon thyme
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 cup chicken stock
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onions and minced garlic, and sauté until fragrant.
- Add the gizzards to the pan and cook until browned on all sides.
- Stir in the diced bell peppers and chopped tomatoes, and cook for 5 minutes.
- Season the mixture with thyme, curry powder, paprika, salt, and pepper.
- Pour in the chicken stock, cover the pan, and simmer for 30 minutes until the gizzards are tender.
- Add the cubed plantains to the pan and cook for an additional 10 minutes, stirring occasionally.
- Adjust the seasoning if needed and serve hot.
