Ingredients
- 2 cups leeks, finely sliced
- 1 cup breadcrumbs
- 1 cup Welsh cheddar cheese, grated
- 2 eggs, beaten
- 1/2 teaspoon mustard powder
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 1 9-inch pie crust, store-bought or homemade
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the leeks, breadcrumbs, grated cheese, beaten eggs, mustard powder, nutmeg, salt, and pepper. Mix well.
- Roll out the pie crust and line a 9-inch pie dish with it.
- Spoon the leek and cheese mixture into the pie crust, spreading it out evenly.
- In a small saucepan, melt the butter over low heat. Stir in the flour to make a roux, then gradually add 1 cup of milk, stirring constantly until thickened.
- Pour the thickened sauce over the leek and cheese filling in the pie crust.
- Place the pie in the preheated oven and bake for 40 minutes, or until the crust is golden and the filling is set.
- Remove from the oven and let the pie cool for a few minutes before slicing and serving.
