Ingredients

  • 2 cups leeks, finely sliced
  • 1 cup breadcrumbs
  • 1 cup Welsh cheddar cheese, grated
  • 2 eggs, beaten
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1 9-inch pie crust, store-bought or homemade

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the leeks, breadcrumbs, grated cheese, beaten eggs, mustard powder, nutmeg, salt, and pepper. Mix well.
  3. Roll out the pie crust and line a 9-inch pie dish with it.
  4. Spoon the leek and cheese mixture into the pie crust, spreading it out evenly.
  5. In a small saucepan, melt the butter over low heat. Stir in the flour to make a roux, then gradually add 1 cup of milk, stirring constantly until thickened.
  6. Pour the thickened sauce over the leek and cheese filling in the pie crust.
  7. Place the pie in the preheated oven and bake for 40 minutes, or until the crust is golden and the filling is set.
  8. Remove from the oven and let the pie cool for a few minutes before slicing and serving.
