Glenfinnan Game Pie
Glenfinnan Game Pie is a traditional Scottish dish that is perfect for a hearty and comforting meal. This rich and flavorful pie is filled with tender game meat and encased in a golden pastry crust, making it a show-stopping centerpiece for any gathering.
Ingredients
- 500g mixed game meat, such as venison, pheasant, and rabbit
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 2 tbsp all-purpose flour
- 300ml red wine
- 300ml beef or game stock
- 2 tbsp tomato paste
- 2 sprigs of thyme
- Salt and pepper to taste
- 500g puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 180°C (350°F).
- Heat the olive oil in a large pan over medium heat. Add the game meat and brown on all sides. Remove the meat from the pan and set aside.
- In the same pan, add the diced onion, carrots, and celery. Cook until the vegetables are softened, then add the garlic and cook for another minute.
- Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes to remove the raw flour taste.
- Pour in the red wine and stock, stirring to combine. Add the tomato paste, thyme, and season with salt and pepper. Return the game meat to the pan and bring the mixture to a simmer.
- Transfer the mixture to a pie dish and cover with puff pastry. Brush the pastry with the beaten egg to create a golden glaze.
- Bake in the preheated oven for 45-50 minutes, or until the pastry is golden and the filling is bubbling.
- Allow the pie to cool for a few minutes before serving.
