Gluten-free Beef Stew

Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 4 celery stalks, sliced
  • 1 lb potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the beef stew meat and brown on all sides, about 5 minutes.
  3. Add the onion and garlic, and cook until softened, about 3 minutes.
  4. Stir in the carrots, celery, and potatoes, and cook for another 5 minutes.
  5. Pour in the beef broth and red wine, if using. Add the bay leaves and season with salt and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 hours or until the beef is tender.
  7. Remove the bay leaves and adjust the seasoning if needed before serving.
