Gluten-free Beef Stew

Ingredients
- 2 lbs beef stew meat, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 4 celery stalks, sliced
- 1 lb potatoes, peeled and diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the onion and garlic, and cook until softened, about 3 minutes.
- Stir in the carrots, celery, and potatoes, and cook for another 5 minutes.
- Pour in the beef broth and red wine, if using. Add the bay leaves and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2 hours or until the beef is tender.
- Remove the bay leaves and adjust the seasoning if needed before serving.
