Gluten-free Chicken And Broccoli Stir-fry

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1/4 cup gluten-free soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, garlic, and ginger. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Heat the remaining tablespoon of olive oil in the same skillet. Add the broccoli and red bell pepper, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the skillet with the vegetables. Pour the soy sauce mixture over the chicken and vegetables. Stir-fry for an additional 2-3 minutes until everything is heated through and well coated with the sauce.
  5. Season with salt and pepper to taste. Serve the stir-fry hot over cooked rice or quinoa.
