Gluten-free Chicken And Broccoli Stir-fry

Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1/4 cup gluten-free soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the soy sauce, honey, garlic, and ginger. Set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- Heat the remaining tablespoon of olive oil in the same skillet. Add the broccoli and red bell pepper, and stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet with the vegetables. Pour the soy sauce mixture over the chicken and vegetables. Stir-fry for an additional 2-3 minutes until everything is heated through and well coated with the sauce.
- Season with salt and pepper to taste. Serve the stir-fry hot over cooked rice or quinoa.
