Gluten-free Chocolate Chip Cookies

Ingredients
- 2 1/2 cups almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 2 teaspoons vanilla extract
- 1/2 cup dark chocolate chips
Instructions
- In a large bowl, combine the almond flour, baking soda, and salt.
- In a separate bowl, mix together the melted coconut oil, honey or maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Gently fold in the chocolate chips.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop the cookie dough onto the prepared baking sheet, using about 1 tablespoon of dough for each cookie.
- Flatten the dough slightly with the back of a spoon.
- Bake for 8-10 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
