Gluten-free Chocolate Chip Cookies

Ingredients

  • 2 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. In a large bowl, combine the almond flour, baking soda, and salt.
  2. In a separate bowl, mix together the melted coconut oil, honey or maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until well combined.
  4. Gently fold in the chocolate chips.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop the cookie dough onto the prepared baking sheet, using about 1 tablespoon of dough for each cookie.
  7. Flatten the dough slightly with the back of a spoon.
  8. Bake for 8-10 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
