Ingredients

  • 2 cups sushi rice
  • 4 nori seaweed sheets
  • 1 large cucumber, julienned
  • 2 ripe avocados, sliced
  • Rice vinegar
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions

  1. Rinse the sushi rice in a fine-mesh strainer until the water runs clear. Cook the rice according to the package instructions.
  2. Once the rice is cooked, season it with rice vinegar to taste and let it cool to room temperature.
  3. Place a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  4. Arrange a layer of julienned cucumber and sliced avocado in the center of the rice.
  5. Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
  6. Repeat with the remaining ingredients.
  7. Cut the sushi rolls into 6-8 pieces using a sharp knife.
  8. Serve the sushi with soy sauce, pickled ginger, and wasabi.
