Ingredients
- 2 cups sushi rice
- 4 nori seaweed sheets
- 1 large cucumber, julienned
- 2 ripe avocados, sliced
- Rice vinegar
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Rinse the sushi rice in a fine-mesh strainer until the water runs clear. Cook the rice according to the package instructions.
- Once the rice is cooked, season it with rice vinegar to taste and let it cool to room temperature.
- Place a nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
- Arrange a layer of julienned cucumber and sliced avocado in the center of the rice.
- Roll the sushi tightly using the bamboo mat, sealing the edge with a little water.
- Repeat with the remaining ingredients.
- Cut the sushi rolls into 6-8 pieces using a sharp knife.
- Serve the sushi with soy sauce, pickled ginger, and wasabi.
