Gluten Free Oat Bread

Ingredients

  • 2 cups gluten-free oat flour
  • 1/4 cup ground flaxseed
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1/2 cup almond milk
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the oat flour, flaxseed, baking powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs, then add the honey, applesauce, almond milk, and apple cider vinegar. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
