Gluten Free Ramen

Ingredients

  • 4 packs of gluten-free ramen noodles
  • 6 cups of chicken or vegetable broth
  • 1 tablespoon of sesame oil
  • 4 eggs
  • 1 cup of sliced shiitake mushrooms
  • 1 cup of baby spinach
  • 4 green onions, thinly sliced
  • 1 tablespoon of gluten-free soy sauce
  • 1 teaspoon of grated ginger
  • 1 teaspoon of minced garlic
  • Salt and pepper to taste

Instructions

  1. Start by boiling the eggs in a separate pot for 7 minutes for a soft-boiled yolk. Once done, transfer the eggs to an ice bath to stop the cooking process. Peel the eggs and set them aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the sliced mushrooms and cook until they are softened.
  3. Stir in the grated ginger and minced garlic, then pour in the chicken or vegetable broth. Bring the broth to a simmer.
  4. While the broth is simmering, cook the gluten-free ramen noodles according to the package instructions. Drain and rinse the noodles under cold water to prevent them from sticking together.
  5. Divide the cooked noodles among 4 serving bowls. Top each bowl with baby spinach and sliced green onions.
  6. Ladle the hot broth over the noodles and vegetables. Drizzle each bowl with gluten-free soy sauce and season with salt and pepper to taste.
  7. Slice the soft-boiled eggs in half and place one egg in each bowl. Serve the gluten-free ramen hot and enjoy!
