Gluten-free Tuna Nicoise Salad

Ingredients

  • 1 pound baby potatoes, halved
  • 4 eggs
  • 1/2 pound green beans, trimmed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives
  • 1/4 cup red onion, thinly sliced
  • 2 (5-ounce) cans of tuna, drained
  • 4 cups mixed salad greens
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Place the halved baby potatoes in a pot of salted water. Bring to a boil and cook for 10-15 minutes until tender. Drain and set aside.
  2. Meanwhile, place the eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat and let the eggs sit in the hot water for 10-12 minutes. Transfer the eggs to a bowl of ice water to cool. Once cooled, peel and quarter the eggs.
  3. Bring a pot of salted water to a boil and blanch the green beans for 2-3 minutes until crisp-tender. Transfer to a bowl of ice water to stop the cooking process.
  4. In a large bowl, combine the cooked potatoes, green beans, cherry tomatoes, Kalamata olives, red onion, tuna, and mixed salad greens.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and toss to coat evenly.
  7. Divide the salad among plates and top with the quartered eggs.
