Gluten-free Vegetable Stir Fry

Ingredients
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1 medium carrot, julienned
- 1/4 cup gluten-free soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the onion and garlic, and sauté for 2-3 minutes until fragrant.
- Add the remaining vegetables to the skillet and cook for 5-6 minutes, or until they are tender-crisp.
- In a small bowl, whisk together the gluten-free soy sauce, rice vinegar, sesame oil, and cornstarch.
- Pour the sauce over the vegetables in the skillet and toss to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Remove from heat and drizzle with the remaining tablespoon of olive oil.
- Serve the gluten-free vegetable stir fry hot and enjoy!
