Gluten-free Vegetable Stir Fry

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 medium carrot, julienned
  • 1/4 cup gluten-free soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.
  3. Add the remaining vegetables to the skillet and cook for 5-6 minutes, or until they are tender-crisp.
  4. In a small bowl, whisk together the gluten-free soy sauce, rice vinegar, sesame oil, and cornstarch.
  5. Pour the sauce over the vegetables in the skillet and toss to coat. Cook for an additional 2-3 minutes until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Remove from heat and drizzle with the remaining tablespoon of olive oil.
  8. Serve the gluten-free vegetable stir fry hot and enjoy!
