Gluten-free Veggie Burger

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup grated carrots
  • 1/2 cup finely chopped bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup gluten-free breadcrumbs
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 gluten-free burger buns
  • Lettuce, tomato, avocado, and other desired toppings

Instructions

  1. In a large bowl, mash the black beans until smooth.
  2. Add the cooked quinoa, grated carrots, chopped bell pepper, cilantro, breadcrumbs, cumin, paprika, salt, and pepper. Mix until well combined.
  3. Form the mixture into 4 burger patties.
  4. Heat a non-stick skillet over medium heat and cook the patties for 5-7 minutes on each side, or until golden brown and heated through.
  5. Assemble the burgers on gluten-free buns with lettuce, tomato, avocado, and any other desired toppings.
