Gluten-free Veggie Burger

Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1 cup grated carrots
- 1/2 cup finely chopped bell pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup gluten-free breadcrumbs
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 gluten-free burger buns
- Lettuce, tomato, avocado, and other desired toppings
Instructions
- In a large bowl, mash the black beans until smooth.
- Add the cooked quinoa, grated carrots, chopped bell pepper, cilantro, breadcrumbs, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into 4 burger patties.
- Heat a non-stick skillet over medium heat and cook the patties for 5-7 minutes on each side, or until golden brown and heated through.
- Assemble the burgers on gluten-free buns with lettuce, tomato, avocado, and any other desired toppings.
