Ingredients

  • 2 pounds potatoes, boiled and mashed
  • 2 cups all-purpose flour
  • 1 egg
  • Salt to taste

Instructions

  1. In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.
  2. On a floured surface, roll the dough into long ropes, about 1 inch thick.
  3. Cut the ropes into 1-inch pieces and use a fork to make indentations on each piece.
  4. In a large pot of boiling salted water, cook the gnocchi in batches for about 2 minutes or until they float to the surface.
  5. Remove the gnocchi with a slotted spoon and transfer to a serving dish.
