Ingredients
- 2 cups groundnuts (peanuts), shelled and roasted
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a blender or food processor, grind the roasted groundnuts into a fine powder.
- In a large pot, sauté the chopped onion and minced garlic until fragrant.
- Add the chopped tomatoes, ground cumin, and paprika, and cook for 5 minutes.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Gradually add the ground groundnuts, stirring constantly to prevent lumps from forming.
- Simmer the stew for 30-40 minutes, stirring occasionally, until it reaches a thick and creamy consistency.
- Season with salt and pepper to taste.
- Serve the Gnut Stew hot with steamed rice or Ugandan Rolex.
