Ingredients

  • 2 cups groundnuts (peanuts), shelled and roasted
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, grind the roasted groundnuts into a fine powder.
  2. In a large pot, sauté the chopped onion and minced garlic until fragrant.
  3. Add the chopped tomatoes, ground cumin, and paprika, and cook for 5 minutes.
  4. Pour in the vegetable broth and bring the mixture to a simmer.
  5. Gradually add the ground groundnuts, stirring constantly to prevent lumps from forming.
  6. Simmer the stew for 30-40 minutes, stirring occasionally, until it reaches a thick and creamy consistency.
  7. Season with salt and pepper to taste.
  8. Serve the Gnut Stew hot with steamed rice or Ugandan Rolex.
