Goan Pork Roulade (Rolê de Porco)
Rolê de Porco, also known as Goan Pork Roulade, is a delicious and flavorful dish from the Goan Catholic Cuisine. This dish is a perfect blend of Goan spices and Portuguese influence, resulting in a unique and mouthwatering pork roulade.
Ingredients
- 500g pork loin, thinly sliced
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon black pepper powder
- Salt to taste
- 2 tablespoons vinegar
- 2 onions, finely chopped
- 2 green chilies, finely chopped
- 1/2 cup coriander leaves, chopped
- 2 tablespoons oil
Instructions
- In a bowl, marinate the pork slices with turmeric powder, red chili powder, ginger-garlic paste, cumin powder, coriander powder, black pepper powder, salt, and vinegar. Let it marinate for 30 minutes.
- After marination, place a portion of the marinated pork slice on a flat surface. Spread a layer of chopped onions, green chilies, and coriander leaves on top.
- Roll the pork slice tightly to form a roulade. Secure the roll with kitchen twine or toothpicks.
- Heat oil in a pan and sear the pork roulade on all sides until golden brown.
- Add a little water to the pan, cover, and cook the roulade on low heat for about 45 minutes or until the pork is tender.
- Once cooked, remove the roulade from the pan, let it rest for a few minutes, then slice and serve hot.
