Goan Pork Roulade (Rolê de Porco)

Ingredients

  • 500g pork loin, thinly sliced
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon black pepper powder
  • Salt to taste
  • 2 tablespoons vinegar
  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 cup coriander leaves, chopped
  • 2 tablespoons oil

Instructions

  1. In a bowl, marinate the pork slices with turmeric powder, red chili powder, ginger-garlic paste, cumin powder, coriander powder, black pepper powder, salt, and vinegar. Let it marinate for 30 minutes.
  2. After marination, place a portion of the marinated pork slice on a flat surface. Spread a layer of chopped onions, green chilies, and coriander leaves on top.
  3. Roll the pork slice tightly to form a roulade. Secure the roll with kitchen twine or toothpicks.
  4. Heat oil in a pan and sear the pork roulade on all sides until golden brown.
  5. Add a little water to the pan, cover, and cook the roulade on low heat for about 45 minutes or until the pork is tender.
  6. Once cooked, remove the roulade from the pan, let it rest for a few minutes, then slice and serve hot.
