Goan Prawn Rissois
Goan Prawn Rissois are a popular savory snack in Goan Catholic Cuisine, featuring a creamy prawn filling encased in a crispy pastry shell. This delicious appetizer is perfect for parties or as a teatime snack.
Ingredients
- 500g prawns, peeled and deveined
- 2 tablespoons butter
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin powder
- Salt and pepper to taste
- 2 cups milk
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 2 cups breadcrumbs
- Oil for frying
- 1 pack of store-bought puff pastry
Instructions
- In a pan, melt the butter and sauté the onion and garlic until soft.
- Add the prawns, paprika, cumin powder, salt, and pepper. Cook until the prawns are pink and cooked through. Remove from heat and let it cool.
- Shred the prawns and set aside.
- In a separate pan, heat the milk. Gradually whisk in the flour to make a thick white sauce.
- Remove from heat and stir in the shredded prawns. Let the mixture cool completely.
- Roll out the puff pastry and cut into circles. Spoon a portion of the prawn filling onto each circle and fold over to form a half-moon shape. Seal the edges with a fork.
- Dip each rissois in beaten egg, then coat with breadcrumbs.
- Heat oil in a pan and fry the rissois until golden brown and crispy. Drain on paper towels.
- Serve hot and enjoy!
