Goan Sausage Pulao

Ingredients

  • 4 Goan sausages, sliced
  • 2 cups long-grain rice
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 2 green chilies, slit
  • 1-inch ginger, grated
  • 4 cloves garlic, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 3 cups water
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pot or deep pan over medium heat.
  2. Add the sliced sausages and sauté until they release their oils and turn slightly brown.
  3. Add the chopped onions, grated ginger, and minced garlic. Sauté until the onions turn translucent.
  4. Add the chopped tomato and green chilies. Cook until the tomatoes are soft.
  5. Stir in the turmeric powder, red chili powder, and garam masala. Cook for a minute to release the flavors.
  6. Add the rice and mix well with the spices and sausage mixture.
  7. Pour in the water, add salt, and bring to a boil.
  8. Once boiling, reduce the heat to low, cover the pot, and let the pulao simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  9. Garnish with fresh coriander leaves and serve hot.
