Goan Sausage Pulao
Goan Sausage Pulao is a flavorful and aromatic rice dish from the coastal state of Goa in India. It is made with traditional Goan sausages, fragrant spices, and long-grain rice, creating a delicious one-pot meal that is perfect for a hearty lunch or dinner.
Ingredients
- 4 Goan sausages, sliced
- 2 cups long-grain rice
- 1 onion, finely chopped
- 1 tomato, chopped
- 2 green chilies, slit
- 1-inch ginger, grated
- 4 cloves garlic, minced
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons vegetable oil
- Salt to taste
- 3 cups water
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a large pot or deep pan over medium heat.
- Add the sliced sausages and sauté until they release their oils and turn slightly brown.
- Add the chopped onions, grated ginger, and minced garlic. Sauté until the onions turn translucent.
- Add the chopped tomato and green chilies. Cook until the tomatoes are soft.
- Stir in the turmeric powder, red chili powder, and garam masala. Cook for a minute to release the flavors.
- Add the rice and mix well with the spices and sausage mixture.
- Pour in the water, add salt, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let the pulao simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Garnish with fresh coriander leaves and serve hot.
