Goan Sausage Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 200g Goan sausage, removed from casing
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Finely chop the mushroom stems and set aside.
  3. In a skillet, cook the Goan sausage, breaking it up with a spoon, until browned.
  4. Add the chopped mushroom stems, onion, and garlic to the skillet and cook until the vegetables are softened.
