Ingredients
- 1 lb boneless, skinless chicken thighs, cut into small pieces
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 1-inch cinnamon stick
- 4-5 dried red chilies
- 1/2 cup grated coconut
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- 1/2 cup water
- 8 small flour tortillas
- Fresh cilantro, chopped, for garnish
- Lime wedges, for serving
Instructions
- Heat the oil in a pan and sauté the onions, garlic, and ginger until golden brown.
- Add the cumin seeds, coriander seeds, cinnamon stick, and dried red chilies. Sauté for a few minutes until fragrant.
- Add the grated coconut and continue to cook until it turns golden brown.
- Transfer the mixture to a blender and blend into a smooth paste with a little water.
- In the same pan, add the chicken pieces and cook until they are no longer pink.
- Add the ground spice paste, turmeric powder, red chili powder, and salt. Cook for another 5-7 minutes.
- Add water and simmer until the chicken is cooked through and the sauce thickens.
- Warm the tortillas in a dry skillet or microwave.
- Assemble the tacos by placing a spoonful of the chicken xacuti filling in each tortilla. Top with fresh cilantro and serve with lime wedges.
